Mexico meets Texas in the mountainous northern region Nuevo Leon. With little vegetation growing in the arid landscape, nearly all dishes centre around meat. Eva is invited to a festive Carne Asada to sample the local Aguja steak and eats Cabrito, a dish descended from Sephardic Jewish tradition.
